It's the tradition in the UK to have a roast beef lunch on Sundays ("Sunday dinner"). This would normally come with roast potatoes, carrots, cabbage, and the most delicious Yorkshire puddings filled with oozing gravy. My maternal grandma "Nanny" made the best "Sunday dinner" in the West Midlands! Having lived through two world wars, she (or my mom) would make good use of the leftovers: she'd fry them up in a pan until they sizzled and browned--hence the name Bubble and Squeak. So delicious! During the wars, there wouldn't have been any meat, though. It's not the most attractive meal in the world, so I'm leaving you a grainy pic of my late grandmother.
